Making a Jian Bing (a picture demo)

Jian Bing, a delicious streetfoor crepe made in

Northern China (this stand was in Beijing).


The stand.

People line up next to the vendor's tricycle,

which is filled with eggs:

The vendor oils the griddle,

ladles on a dollop of batter,

and spreads it with an expert twirl of her crepe tool.

She breaks an egg over the crepe

and sprinkes over some chopped scallions.

She flips the pancake

and brushes on hoisin and hot sauce.

Inside she puts a piece of fried pork skin

which she breaks up with her palette knife

so she can fold up the crepe.
